roasted honey mustard salmon
roasted honey mustard salmon is another one of my favorite go-to dinner recipes: it’s easy, healthy, and delicious. easy: the salmon only bakes for 10 minutes! delicious: it is moist and has fabulous flavor. the mustard and lemon tenderize the salmon, the honey adds a sweet note, and the thyme give it that homey, herby flavor. healthy: wild salmon (buy wild over farmed) is full of omega 3 fatty acids, and the honey mustard sauce only has ~70 calories per serving. dinner doesn’t get much better than that!
why buy wild salmon, you ask? studies have shown that higher levels of omega 3s in blood are associated with living longer. yes, sometimes wild will be more expensive. that is because farmed fish are frequently fed junk. this junk diet in turn reduces the amount of omega 3s in the farmed salmon, which reduces the benefit you and your family then get by eating it. wild salmon has been shown to have 600 – 1,000% more omega 3s (the good ones) vs. omega 6s (the bad ones), while farmed salmon has been shown to have a 1:1 ratio. that is pretty significant people!
helpful shopping note when looking for wild salmon: wild salmon will look like the salmon you’d rather eat. it will be dark pink and pretty, and there won’t be a bunch of visible fat (again, because of the non-junk food diet of wild salmon unlike the farmed stuff). also, “sockeye salmon” and “alaskan salmon” pretty much means they’re wild (alaskan sockeye isn’t allowed to be farmed), and “atlantic salmon” you should avoid, as it usually means it’s farmed.
enough learning–more eating! i like to serve this salmon with my simple lemon & parmesan kale salad and cauliflower mash yum!
Ingredients
1 piece of wild, skin-on salmon (1.25 lbs)
2 tbsp. whole grain dijon mustard
2 tbsp. honey
1 tbsp. olive oil
10 sprigs of fresh thyme (5 left with the leaves intact and 5 with the leaves removed)
1 large lemon
Instructions
preheat oven to 450.
in a small bowl combine mustard, honey, & olive oil.
cover roasting pan with nonstick (or oiled) aluminum foil, and place salmon skin side down.
liberally salt & pepper the salmon flesh.
pour the honey mustard sauce over the salmon.
slice 1/2 the lemon to form round, thin slices, and reserve the other 1/2.
place the lemon slices on top of the sauced salmon, as well as the thyme whole sprigs and leaves.
arrange to make pretty and distribute evenly.
cook the salmon for 10 minutes, squeeze the remaining 1/2 of the lemon over the top when it comes out, and that's it!
