this is the yummiest chicken tortilla soup I have ever had, and my husband (who is EXTREMELY picky when it comes to his favorite genre of food, Mexican) agrees! it is the perfect amount of spicy, and the sour cream and cheese toppings cool it down for the best balance of flavors. chock full of chicken and veggies, chicken tortilla soup is a complete meal the entire family will love! make this for a weeknight, a party, a rainy day, or even freeze for leftovers–enjoy!
paleo banana bread
who doesn’t want to wake up to a delicious slice of paleo banana bread?! there is no gluten in this recipe, and the sweetness comes just from the bananas–no added sugar! it is full of healthy ingredients, so you don’t have to feel guilty about indulging in a big slice with your morning cup of coffee!
warm brussels sprout caesar salad
palm beach has a couple of restaurants that offer a warm brussels sprout caesar salad (namely buccan and hmf at the breakers), and they are SO delicious. i had to set off and figure out how to make this at home!
cauliflower pizza
in honor of it being march 14 (aka pi day, and my dad’s birthday!), i thought it appropriate to post my recipe for cauliflower pizza. you can buy the full head of cauliflower and go to the trouble of washing, chopping, and getting out the food processor, but why would you do that? now they sell riced cauliflower already done for you in the grocery store! makes life so much easier, and then you can whip up this easy, carb-free, & delicious meal in no time!
spinach feta quiche
spinach feta quiche is my new favorite breakfast. it can also be lunch, brunch, dinner.. basically, you can eat this any time of the day. trust me, you will want to because it is THAT good. if you’re a fan of spanakopita (greek spinach pie), then you will love this. it’s full of healthy spinach, salty & creamy feta cheese, and the flaky, buttery crust is the perfect vessel. i made this along with my ham & cheese quiche for a brunch with friends last week, and they were both giant hits. the crust recipe makes 2 servings, so you might as well make 2 quiches since you’re going to the trouble to make the crust anyway. try them both out, and let me know which one you prefer!
spinach artichoke dip
if you’ve been to houston’s, you’ve had their spinach artichoke dip. you can’t go there and not order it–it is the BEST thing on the menu, and there are a lot of good things on the menu. it’s creamy, cheesy, & healthy because it has spinach and artichokes in it (right?!), at least that’s what i will tell myself.. i had to figure out how to make it at home!
pork carnitas
these pork carnitas are tender, juicy, citrus-ey, and spicy–everything good mexican food should be! the best part is that they’re easy; just brown the meat & throw everything in the slow cooker. top them with my simple-to-make pickled onions & lime crema, and enjoy this new taco night favorite!
cauliflower mash
who needs regular, standard ole mashed potatoes when you can have cauliflower mash?! cauliflower mash is MUCH simpler to make than the real thing, and it has MUCH fewer calories. now you’re thinking yeah, so it’s simpler and lighter, but how does it taste? this cauli mash literally taste amazing; my husband swears it’s even better than the real thing. now go eat a big, guilt-free, delicious heap!
