paleo banana bread
who doesn’t want to wake up to a delicious slice of paleo banana bread?! there is no gluten in this recipe, and the sweetness comes just from the bananas–no added sugar! it is full of healthy ingredients, so you don’t have to feel guilty about indulging in a big slice with your morning cup of coffee!
this recipe is almost paleo, but only because i added regular chocolate chips (i think they melt and taste better in baked goods). if you want to make it 100% paleo with 0 added sugar, either omit the chocolate chips, or you can use chocolate with no added sugar. i like this brand if you choose to go that route: lily’s dark chocolate chips
aside from it being healthy, the reason this paleo banana bread is so good is that it comes out super moist. the coconut oil and almond butter not only taste great in it, but they also provide the necessary amount of fat to ensure that this bread does not come out dry (so long as you don’t overcook it, that is)! it is also really simple to make.
next time you have some brown bananas you’re about to throw away STOP! and make some of this delicious paleo banana bread instead!
paleo banana bread
Ingredients
- 2 cups mashed bananas make sure they’re REALLY ripe–aka the brown bananas you don’t know what to do with
- 4 eggs
- 4 tbsp melted coconut oil
- 1/2 cup almond butter
- 1/2 cup coconut flour
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp vanilla extract
- 1/2 cup chocolate chips use sugar free or omit if you want to keep this recipe 100% paleo
- 1/2 cup walnuts coarsely chopped
Instructions
- preheat the oven to 350 and grease a 9×5 loaf pan (you can use butter or coconut oil–whatever is easiest and you have on hand)
- mash the bananas in a large bowl until they form a paste-like consistency
- melt the coconut oil, and add to the mashed bananas
- add in the almond butter and stir
- once the coconut oil is incorporated and the mixture has cooled down a bit, add in the eggs and vanilla extract
- in a separate bowl, mix up coconut flour, cinnamon, salt, baking powder, and baking soda
- add the dry ingredients into the wet until incorporated
- last, add in the chocolate chips and walnuts
- pour into the prepared loaf pan and bake ~1 hour–check with a toothpick after 45 minutes, and bake until the toothpick comes out clean
