popovers with strawberry butter

because popovers with strawberry butter are so freaking delicious, i never attempted making them because i figured they had to be complicated! the puffing up in the oven reminds me of a soufflé, so I naturally thought that popovers would also require all kinds of technique. it turns out that popovers are crazy easy! this recipe calls for only 5 ingredients!! all it really requires is some mixing, waiting, pouring, and baking; that’s it! try them for yourself and you will see 🙂
the idea behind making homemade popovers with strawberry butter was inspired by paulette’s restaurant in memphis (which is where i grew up). paulette’s serves warm popovers with strawberry butter as the bread service before a meal, and they are heavenly. i decided i had to learn to make my own, and the fact that they ended up being so simple means i will be making them again and again!
these popovers will come out of the oven warm, eggy, light and airy. the strawberry butter smothered on top melts and adds a hint of richness & just the right touch of fruity sweetness. i served these alongside my ham & cheese quiche for brunch, and they were the perfect complement. i’m getting hungry thinking about it!
note: if you don’t have a popover pan you can use a muffin pan. just be sure to fill every other cup so that the popovers have room to pop!
Ingredients
1c. whole milk or half & half
1c. flour
3/4 tsp. salt
3 lg. eggs
2 tbs. butter
1/2c. butter (1 stick)
1/2c. chopped strawberries
Instructions
set out the eggs and allow to come to room temperature
warm the milk on the stove on medium-low and add the butter, allow to melt in the milk

while waiting for the butter to melt whisk together the flour and salt in a large bowl
once the butter melts, allow the milk/butter mixture to cool a bit (you don't want to scramble the eggs) and add in the eggs
mix together the wet and dry ingredients until only small lumps are left--you do not want to over-mix! it should look like this:

let the batter rest, covered, for about an hour
position an oven rack as low as possible and preheat the oven to 425
grease a 6c. popover pan (each cup on mine measured 2 3/4 x 2 1/4) with butter and place empty in the oven to heat up (about 5-10 minutes)
carefully remove the warm pan and fill each cup (mine ended up making 4 regular-sized and 1 puny popover) ~3/4 full

cook on lowest rack for 15 minutes then reduce the oven temperature to 350 and cook 10-15 minutes more (or until the center looks firm and the popovers are golden brown and puffed up)

let the butter come to room temperature & chop up the strawberries
throw both together in a stand mixer (i used my nutribullet, but a stand mixer
or hand mixer
would work better)
form into cute little balls with a melon baller or spoon
serve butter with the popovers fresh from the oven, and enjoy!
