crock-pot pulled bbq chicken

i grew up in memphis, and this crock-pot pulled bbq chicken (barbecue/bar-b-que, however you like to spell it your neck of the woods) rivals some of the best (seriously!). it’s so simple to make, much healthier than pork, and SO good. just set & forget 😉 

with slow cooker/crock-pot recipes, i’ve learned the hard way not to:

1.) lift the lid during the cooking process (it can be hard to resist, i know!),

2.) shred the meat too early,

3.) leave the meat in there for too long, or

4.) add TOO much liquid.

doing any of the above will result in dry meat, which no one thinks is good (except maybe a dog?).  as for length of time, the general rule of thumb is 1-1.25 hours per pound of meat when cooking on high & 1.25 – 1.5 hours per pound of meat when cooking on low. as far as the liquid rules go, make sure not to completely cover the meat in liquid. otherwise, the meat will boil in there and get tough. instead, the liquid should go about 1/2 – 3/4 of the way up to covering the meat.

Pulled BBQ Chicken

Prep Time: 5 minutes

Cook Time: 3 hours, 30 minutes

Total Time: 3 hours, 35 minutes

Yield: 4 servings

Pulled BBQ Chicken

Ingredients

2 lbs. organic chicken breast

1/4c. olive oil

3 cloves garlic

1c. BBQ sauce

1 tbs. worcestershire

1/8c. apple cider vinegar

1 tbs. liquid smoke

1 tsp. oregano

1/2 tsp. onion powder

1/2 tsp. each black pepper & salt

1 tsp. cornstarch

Instructions

crush up the garlic, using a garlic press to make it easy (or just mince it up if you don't have one).

add garlic and all other ingredients (except chicken & cornstarch) to a medium bowl & mix.

place chicken in your slow cooker, pour in BBQ sauce mixture, & set to high for 3 hours.

After the 3 hours, using 2 forks shred the chicken apart (it should fall apart easily with little effort).

Scoop out 1 tbs. of the cooking liquid into a small bowl & whisk the cornstarch in with a fork.

Return the cornstarch liquid to the slow cooker and mix to combine.

Cover the slow cooker and cook on high for another 30 minutes.

Serve, and enjoy with mama's slaw, sweet potato fries, and Amy's Organic Vegetarian Beans!

*note: can also be enjoyed on a bun with the slaw piled high on top (or skip the bun for the healthier verison--enjoy!)
