pumpkin cookies with vanilla glaze
these pumpkin cookies with vanilla glaze are so soft and SO good. they have a cake-like texture, and pumpkin is full of vitamin A–so basically they are good for you & you should eat them immediately!
i am a lover of all things pumpkin. pumpkin pie, pumpkin bread, pumpkin spice lattes (PSLs), even japanese pumpkin (kabocha squash that you find tempura fried or steamed in japanese restaurants), and of course, pumpkin cookies.
pumpkin cookies are a great dessert, and they are also absolutely delicious in the morning with coffee. my husband is not a sweets guy, and he was taking them to work in the mornings and even requested more when they ran out! these cookies are not overly sweet, as the spices balance out the sweetness, and the glaze on top adds that little extra hint of sweet that brings it all together.
they also make for great fall gifts or housewarming presents–simply stack 3 or 4 up, wrap them in cellophane, and tie a bow around the top to seal the bag. the glaze makes them look so pretty and professional, and the drizzling step is fun to do since it allows you to conjure up your inner childhood artist (remember toaster strudels?!).
instead of pumpkin bread this year try something new, and give these cookies a whirl!
Ingredients
2.5 c. flour
1 tsp. cinnamon
.5 tsp. nutmeg
.5 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1.5 c. granulated sugar
1 stick butter
1 c. canned pumpkin
1 egg
1 tsp. vanilla extract
2 c. powdered sugar
3 tbs. milk
1 tsp. vanilla extract
1 tbs. melted butter
Instructions
preheat oven to 350.
combine flour, cinnamon, nutmeg, salt, baking powder, & baking soda.
in a separate bowl, beat together the butter & sugar.
add the pumpkin, egg, & vanilla to the butter & sugar mixture.
add the flour mixture gradually until all of the ingredients are well-combined.
cover baking sheets in parchment paper & drop the dough by rounded spoonfuls (the dough will be very sticky).
bake 15-20 minutes until the edges begin to brown slightly.
remove from oven and allow to completely cool.
while cookies cool, whisk together the powdered sugar, milk, vanilla, and melted butter until smooth.
once cookies are cool to the touch, drizzle the glaze over & allow to dry.
eat up!
