spinach feta quiche
spinach feta quiche is my new favorite breakfast. it can also be lunch, brunch, dinner.. basically, you can eat this any time of the day. trust me, you will want to because it is THAT good. if you’re a fan of spanakopita (greek spinach pie), then you will love this. it’s full of healthy spinach, salty & creamy feta cheese, and the flaky, buttery crust is the perfect vessel. i made this along with my ham & cheese quiche for a brunch with friends last week, and they were both giant hits. the crust recipe makes 2 servings, so you might as well make 2 quiches since you’re going to the trouble to make the crust anyway. try them both out, and let me know which one you prefer!
popovers with strawberry butter
because popovers with strawberry butter are so freaking delicious, i never attempted making them because i figured they had to be complicated! the puffing up in the oven reminds me of a soufflé, so I naturally thought that popovers would also require all kinds of technique. it turns out that popovers are crazy easy! this recipe calls for only 5 ingredients!! all it really requires is some mixing, waiting, pouring, and baking; that’s it! try them for yourself and you will see 🙂
banana nut coconut muffins
these banana nut coconut muffins are moist, the perfect amount of sweet, and have great texture from the toasted coconut on top and walnuts within. i served them alongside eggs for brunch, and the leftovers have made for great on-the-go morning breakfasts. if you prefer, you can also make the same recipe into a banana nut coconut bread. either way, the flavors of banana, nuts, and coconut are perfect for summertime!
buttermilk biscuits with sausage gravy
i made these flaky, layered, buttermilk biscuits with sausage gravy for easter brunch–who doesn’t want to wake up to the smell of sausage and homemade, buttery biscuits on a holiday morning?! these are easier than they sound, and the whole meal came together in under an hour. try them out, and i’m willing to bet you won’t go back to pillsbury!
ham & cheese quiche
i decided to make ham & cheese quiche for brunch with some friends. when i told my husband what was on the menu, he had the audacity to ask “well steph, you’ve never made a quiche before, do you think you can properly execute it?” challenge accepted. let’s just say he had seconds, took the leftovers to work the next morning, and requested we have it again.. 🙂
cinnamon raisin oatmeal bread
i made this cinnamon raisin oatmeal bread yesterday morning for an impromptu brunch with friends. it’s easy to put together (i literally chose it because it was the only thing i could make with the ingredients i easily had on hand), makes the house smell great, and is insanely delicious. everyone loved it!
