chicken tortilla soup
this is the yummiest chicken tortilla soup I have ever had, and my husband (who is EXTREMELY picky when it comes to his favorite genre of food, Mexican) agrees! it is the perfect amount of spicy, and the sour cream and cheese toppings cool it down for the best balance of flavors. chock full of chicken and veggies, chicken tortilla soup is a complete meal the entire family will love! make this for a weeknight, a party, a rainy day, or even freeze for leftovers–enjoy!
pork carnitas
these pork carnitas are tender, juicy, citrus-ey, and spicy–everything good mexican food should be! the best part is that they’re easy; just brown the meat & throw everything in the slow cooker. top them with my simple-to-make pickled onions & lime crema, and enjoy this new taco night favorite!
chicken enchilada casserole
this chicken enchilada casserole is literally the perfect recipe. it’s easy, SO delicious (i’ve made it multiple times, and each time i hear that it’s the best enchilada recipe ever tasted), and you can make it in advance! all you have to do is pop it in the oven when your guests arrive.
mexican caesar salad
this mexican caesar salad is so easy that you can put it together in literally about 15 minutes (can you tell that’s a theme with me?)! it’s a great accompaniment to tacos, quesadillas, empanadas, enchiladas, etc. you can top it with whatever protein you have around (taco meat to turn it into a different variation of my chicken taco salad would be great!), or just eat it on its own. if you love regular caesar salad, then you will love this cheesy, nutty, herby twist with a kick!
ultimate guacamole
just in time for cinco de mayo tomorrow–whip up some of this ultimate guacamole, bring along some tortilla chips, and start counting all of your new friends who want you back next year.
chicken taco salad
when you’re craving mexican but no quiero taco bell, try this yummy chicken taco salad. it’s kind of like a homemade yet healthier version of a burrito bowl–no need for the tortilla or taco shell.
